The fields you added yourself arrive on a record in sections, and the section is the unit permission works on. A group owns its order, its colour, and the switch deciding whether what it holds reaches the table at all.

How it works.
You draw them, nothing arrives drawn
A new workspace has no sections at all, so the first one is yours to name. Membership is single: a field belongs to one or to none, and one left outside every section behaves as fully open, which is the fallback rather than a fault.
Showing on the record, hiding in the table
A section can be kept off the grid and still be edited on the record. It is the difference between data your reps maintain and data your reps scroll past, and it is one switch.
The grant is on the section
A permission profile gets view, edit or delete against a whole section. Absent any entry the section is open, so the model starts permissive and you close what needs closing rather than opening a hundred fields one at a time.
What withholding actually covers
A withheld section keeps its values off the record and out of the list. The names of the fields and the options they offer are not a secret, and a section can be reordered or recoloured without touching who may read it.
