Eighteen operators the server resolves, changing with the type of column you are standing on, and a search box running against a trigram index. This is the mechanics; keeping the answer is what a view is for.

How it works.

The column offers what it can answer

Text takes contains, starts, ends, their negations and the two emptiness checks. Numbers take the four comparisons and between. Dates take before and after. Which of them you are shown is decided by the type the column holds.

The menu and the resolver agree

The grid draws eighteen operators and the server resolves every one of them, a date range and both not-between forms included. What you pick off the menu is what narrows the list, which is why a view built on one behaves the same tomorrow.

Searching and filtering are not the same tool

The search box runs a trigram index built over the two name columns, email, two of the four numbers, job title and city. It needs three characters and returns a bounded match set, because it is a find box rather than a report.

Where a custom-field filter is resolved

Contains and equals on a custom field are pushed into the database, which narrows what has to be fetched. The comparison itself still happens in memory over that slice, as does any group joining conditions with and or or.
